Cheese Opening: Alfred Le Fermier

This Saturday April 25, we are opening a very special wheel of cheese in front of Each Peach Market at 4pm, the lauded, unique and delicious 

- Alfred Le Fermier-

This cheese is made by the accomplished Fromagerie La Station.

Based in the town of Compton in Québec province, Fromagerie La Station is led by passionate, fourth generation farmers who put an emphasis on sustainability and amazing product.

They prioritize the well-being of their herd of 85 dairy cows. Starting in the spring, the cows roam freely, nibbling on the fresh green herbs and grasses of the meadows: white clover, wild clover, alfalfa, trefoil, and more.

The resulting milk, certified organic, is collected every morning and used to create cheeses with a distinctive terroir and flavor.

Alfred le Fermier itself is a farm cheese named after the family's ancestor and founder Alfred Bolduc, who acquired the lot of land in 1928 that their farm and fromagerie now stand on. 

The organic raw milk is turned into a cooked, pressed cheese that is then aged on a wood board for a minimum of 8 months. The resulting deep yellow rind has a pleasant woodsy fragrance and the inside stands out with its supple texture and complex flavors of hazelnuts, caramel and flowery honey.
