Specialty cheeses from Neal’s Yard Dairy!

Neal’s Yard Dairy (NYD) is a famed purveyor and champion of British and Irish cheeses, striving to protect traditional recipes and encourage innovation. They work with about 40 cheesemakers from Britain and Ireland, selecting only their best batches of cheeses for the NYD maturation rooms. Each batch of cheeses are carefully tasted as they age, and NYD lets their customers know how the cheeses are stacking up from week to week. 

Your Each Peach cheese mongers are excited to have a few choice examples in stock now! We chose two blue cheeses we think you are going to love as well as a showstopping and very snackable Red Leicester. 

Mature Sparkenhoe Red Leicester
A show stopper that will be perfect on your next cheese board. This farmhouse revival of a classic British cheese is complex, yet approachable. It gives cheddar vibes without the acidity that you normally get in cheddars. We adore its texture - chewy in a very satisfying meaty way. Nutty and broth, the cheese excludes savory notes in this extra aged version.

 

Stichelton
Made in a similar place and style as Stilton, but because it’s made with raw milk, you’re not allowed to use the Stilton name. Honestly, calling it a raw stilton doesn't really do the cheese justice; it’s so much more. It's full of juicy acidity, toasty notes and deep umami. 

Stichelton will be amazing sprinkled on a salad, a steak or some roasted carrots. NYD was instrumental in getting this cheese back to the market, as no one had been making a raw milk version of this classic cheese since the early 2000s. 

Shropshire Blue
Mild, fudgy, and generally possessing a sunny outlook on life (it also has a sunny complexion due to annatto used to set it apart from other blues). Like Stichelton, Shropshire was also created as a 20th century update to the classic English Stilton. This is our favorite blue for pairing with sweet things- you new favorite dessert blue (yes, it’s a thing and worth a try for you adventurous cheese folk!). Try it on an Effies oat cake with a bit of chocolate and you will not be disappointed. If there’s any oloroso or cream sherry in the house, definitely reach for that too.
