Pasture-raised leg of lamb (uncooked) from the amazing Elysian Fields farm. A partnership with famed 3 Michelin Star chef Thomas Keller, known for his reverence for products and his suppliers, Elysian fields is a Pennsylvania-based collective of farms that their lambs transparently, with access to beautiful grain, clean water and lots of outdoor and forage time in the fields. 
Available bone-in or butterflied. A butterflied piece of lamb means a boneless leg of lamb has been specially split open and rolled out, which makes the seasoning and trussing that much easier.

Bone-in Leg of Lamb: $15/lb (each piece is between 15-18lbs)
Butterflied Leg of Lamb: $20/lb (each piece is between 6-8lbs)
$25 deposit, remainder due upon receipt.
We cannot guarantee exact size, but let us know if you'd like something on the bigger or smaller side and we will do our best to meet your request.
