Rush Creek Reserve Pre-Order

Rush Creek Reserve is an extremely rare, very seasonal cheese made from the rich milk of Uplands Cheese's cows as their diet turns from summer pasture to winter's dry hay. The result is a soft, decadent and utterly unique cheese reminiscent of a savory custard, wrapped in spruce bark to give it shape and a subtle, woodsy flavor.

This is a pre-order only to reserve your cheese. Cheeses will arrive in mid-November. We'll contact you when they are available for pick up. 

Uplands Cheese Dairy Farm sits on the corner of southwest Wisconsin on 500 hilly acres of rolling pasture. The farm takes pride in their milk, and their cows eat only eat only fresh pasture from spring through fall which imparts superior nutrition and flavor. They rotate fields daily to ensure their cows are only eating fresh grass and to ensure that no one field is overgrazed and will be able to regenerate the following season.
