We are so excited about one of the newest additions to our cheese case, a beautiful blue that is a collaboration between one of our favorite DC chefs - Jose Andres - and Rey Silo, a cheese dairy located in Asturias, Spain, known for making truly unique, artisanal raw milk cheeses.
Their collaboration has given rise to Mamá Marisa a beautiful raw blue cheese. Its name pays tribute to the chef's mother because she was the one who taught Andres to love Asturian blue cheeses as a child. When José Andrés' family moved to Catalonia, his mother used to prepare slices of apple topped with Asturian blue cheese for them, allowing their palates to travel to the green valleys of the Principality.
A large-format cheese, Mama Marisa Blue weighs around 18lbs. Like all Rey Silo cheeses, it is made with raw and whole cow's milk from a single Asturian farmer and crafted entirely by hand, incorporating several innovations in the curd-making process to achieve the desired maturation of the cheese.
This Rey Silo Blue is deep, balanced, with a velvety texture and mouthfeel. It's creamy, salty, fruity and floral, persistent but also delicate.
